Chinese Sesame Chicken Fingers

Chicken cutlets dredged in egg and mixtures of flour, salt and pepper and Panko bread crumbs and sesame seeds. Chicken is cooked in hot oil until golden brown and cooked through. Breaded chicken strips served with two peanut dipping sauces.

Ingredients -

1/3 cup All-Purpose Flour
1/2 cup Panko Bread Crumbs (or unflavored bread crumbs)
1/3 cup Sesame Seeds
2 Eggs
1/4 teaspoon Coarse Salt
1/4 teaspoon White Pepper
1/2 teaspoon minced Fresh Garlic
1/2 quart Vegetable Oil
1 pound Chicken Cutlets, cleaned, cut into bite-size pieces
Peanut Sauce or Honey Peanut Sauce, for dipping

Low Fat Peanut Sauce:

1/4 cup Natural Peanut Butter
1/4 cup Water
2 tablespoons Fresh Lime Juice
1 tablespoon Tamari (optional)
1/2 teaspoon grated Lime Zest
1/2 teaspoon minced Garlic
1/2 teaspoon grated Fresh Gingerroot
1/2 teaspoon Thai Chili Paste

Honey Peanut Dipping Sauce:

1/2 cup Natural Peanut Butter
1/4 cup Honey
1 tablespoon Rice Wine, Cider or Sherry Vinegar
2 teaspoons Toasted Sesame Oil
1-1/2 teaspoons Soy Sauce
Pinch salt, if Peanut Butter Unsalted
2 to 4 tablespoons Water

 
Preparation:

1. In a large bowl, combine the flour, salt, pepper and garlic.

2. In another bowl, beat the eggs.

3. In a third bowl, combine the bread crumbs and seeds.

4. Dredge the chicken fingers in the flour mixture.

5. Dip the fingers in the beaten eggs.

6. Dredge the chicken fingers in the breadcrumb mixture.

7. In a large saucepan, heat the oil on high, being careful not to smoke the oil.

8. Drop the chicken fingers into the hot oil and cook until golden brown.

9. Remove the pieces to a plate lined with paper towels to soak up the oil.

10. Serve hot with a small bowl of peanut sauce for dipping.

Low Fat Peanut Sauce:

1. Combine all of the ingredients in a food processor.

2. Mix until smooth.

Honey Peanut Dipping Sauce:

1. Combine the first 6 ingredients in a small glass bowl.

2. Add water to change the consistency to a thick dip.

3. Serve immediately.
