Chinese Garlic Chicken

Chicken breast pieces are marinated in soy sauce, dry sherry, sesame oil, and chili paste. Chicken is stir-fried in hot oil with minced garlic, green onion, soy sauce and dry sherry. This is a fabulous main dish and is very flavorful. It goes great with a vegetable stir fry with snap peas, baby corn and asparagus.

Ingredients -

1 Pound Boneless Skinless Chicken Breasts

Marinade:
2 tablespoons Soy Sauce
1 tablespoon Dry Sherry
Few Drops Sesame Oil
1/4 teaspoon Chili Paste

4 Garlic Cloves, finely minced
2 Green Onions, finely chopped on the diagonal
Vegetable Oil for Stir-Frying
1 tablespoon Soy Sauce
1 tablespoon Dry Sherry

 
Preparation:

1. Cut the chicken into bite-sized cubes.

2. In a bowl, mix in the soy sauce, sherry, sesame oil and chili paste.

3. Marinate the chicken in the mixture for 30 minutes.

4. While the chicken is marinating, prepare the garlic and green onions.

5. Heat the wok and add the vegetable oil.

6. When the oil is ready, add the marinated chicken.

7. Stir-fry briefly on high heat, then add the garlic and green onion.

8. Add the remaining ingredients and combine and cook for 5 minutes or until done. Serve hot with rice.
