Asian Style Steak and Mushroom Wraps

Flank steak, sliced white mushrooms, and mixed vegetables stir fired with Hoisin sauce and wrapped in warm tortillas.

Ingredients -
3 tablespoons Vegetable Oil, divided
1 pound Flank or Round Steak, cut in thin strips
1 pound Fresh White Mushrooms, sliced (about 6 cups)
1 (16 ounces) package Frozen Stir-Fry Vegetables (about 1-1/2 cups)
1/3 cup Hoisin Sauce
6 (8-inch) Flour Tortillas
 
Preparation:

1. Heat 2 tablespoon of vegetable oil, in a large skillet over medium-high heat.

2. Add 1/2 pound of the flank steak strips to the skillet.

3. Cook and brown on both sides for approximately 5 minutes.

4. Remove the steak to a plate and set aside.

5. Repeat with the remaining beef.

6. Heat the rest of the vegetable oil in the same skillet.

7. Add the mushrooms and cook until tender and all of the liquid has cooked off, which takes about 5 minutes.

8. Add the frozen vegetables and cook, stirring frequently, until the vegetables are crisp tender which takes about 3 minutes.

9. Stir in the hoisin sauce and the reserved beef.

10. Cook for 2 minutes.

11. Spoon an equal portion of beef and mushrooms onto one side of each of the tortillas.

12. Roll the tortillas together to enclose the beef/mushroom filling.

13. Cut the rolled tortillas in half diagonally.

14. Serve immediately.
