1. Combine the bread crumbs, peanuts, red pepper flakes, garlic powder and ground ginger in a small mixing bowl.
2. Set aside.
3. Spray a 9-inch glass pie plate with non-stick cooking spray.
4. Place the cleaned scallops in the pie plate and brush with olive oil.
5. Spoon the peanut/bread crumb mixture over the top.
6. Cover with plastic wrap, venting slightly.
7. Microwave for 5 minutes on high.
8. Let stand for 5 minutes, not removing the plastic wrap.
9. Serve with steamed vegetables, if desired.
