Asian Style Scallops

Sea scallops coated in olive oil and mixture of unseasoned bread crumbs, finely chopped salted peanuts, red pepper flakes, garlic powder, and ground ginger. Cooked until scallops are heated through.

Ingredients -
1/4 cup Unseasoned Bread Crumbs
1/4 cup Salted Peanuts, finely chopped
1/4 teaspoon Red Pepper Flakes
1/4 teaspoon Garlic Powder
1/4 teaspoon Ground Ginger
1 tablespoon Olive Oil
1-1/2 pounds Sea Scallops
 
Preparation:

1. Combine the bread crumbs, peanuts, red pepper flakes, garlic powder and ground ginger in a small mixing bowl.

2. Set aside.

3. Spray a 9-inch glass pie plate with non-stick cooking spray.

4. Place the cleaned scallops in the pie plate and brush with olive oil.

5. Spoon the peanut/bread crumb mixture over the top.

6. Cover with plastic wrap, venting slightly.

7. Microwave for 5 minutes on high.

8. Let stand for 5 minutes, not removing the plastic wrap.

9. Serve with steamed vegetables, if desired.
